Apple Pecan Blondies

Ingredients
Apples
- 2 apples, peeled and thinly sliced (we like Ambrosia, Cortland, Fuji, or SnapDragon®)
- 1 Tbsp dark brown sugar, packed
- 1 tsp lemon juice
- 1 tsp water
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- ¾ cup (1½ sticks) unsalted butter
Blondies
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 1½ cups dark brown sugar, packed
- ¾ cup (1½ sticks) unsalted butter, melted and cooled
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup chopped pecans

Apples
- In a small saucepan over medium heat, add apples, brown sugar, cinnamon, and ginger. Stir and cook until apples have softened, about 5 minutes. Remove from heat and set aside.
Blondies

Preheat oven to 350° F. Line bottom and sides of a 9 in. x 13 in. baking dish with parchment paper and set aside.
- In a medium-sized bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate medium-sized bowl, whisk together brown sugar, melted butter, eggs, and vanilla extract. Pour wet ingredients into dry ingredients and stir until just combined.
- Fold in apples and pecans and mix until incorporated. Batter will be very thick.
- Spread batter evenly in the prepared baking dish. Bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
- Remove from oven and allow to cool on a wire rack before cutting into squares and serving.
